In the warm months of summer, I love to create summer cocktails with the fabulous local fruits that the season brings us,. In recent weeks, I’ve been experimenting with the Mojito, which I must say makes the most refreshing hot-weather drink! But instead of rum, I thought, what about making Mojitos with Scotch? A Scotch lover myself, it seemed a perfectly delicious idea… So I went to work and I was thrilled with the results – the “Scojito” was born!
To take the experiment to the next level, Doug came over one evening with a sampling of the truly mouthwatering Glenmorangie single malts cask experssions. With these amazing Scotches, I created several Scojitos that are as refreshing as they are unique… And the best part is that I don’t have to miss drinking Scotch in the summer!

| Viviane's Tips for Amazing Drinks |
| 1/ Use a muddler with spikes to make sure you crush the fruits thoroughly. The essence in the citrus zest will release all its precious flavor into your drink.
2/ “Over-sugaring” is no less than a sin! We tested all the Scojitos many times to come up with the perfect balance (the sugar should be barely perceptible): It was a hardship on us all… !
3/ Use large ice cubes. The drink will get cold faster when shaken and less diluted.
4/ Make only 2 drinks at a time – as the recipe is written. Muddling more than that is a bit hard and will affect the quality of your drink.
5/ Use fresh ingredients. As with cooking, the freshest ingredients will yield the most delicious cocktails.
