Scotch Bites: Cooking with Scotch

by Viviane Bauquet Farre - October 2008

My focus when I create recipes is always flavor, flavor and more flavor. How can I get the most out of the ingredients I use? Of course, using fresh, high quality ingredients is always my starting point, but now and then I want something more, something exceptional and packed with flavor. Spirits, wines and liqueurs fit the bill (in fact a little usually goes a long way). I absolutely adore how a single tablespoon of fragrant Scotch can take a recipe from good to fabulous! For example, the chocolate truffles are really delicious on their own. I always use the finest semi-sweet chocolates I can get my hands on… but add a little Scotch to the recipe and they become out of this world!

I also love to use Scotch in unexpected ways, like in the syrup for our pancakes (hey, I’m not shy…!) or a savory dish like the tapenade. The possibilities are endless and your taste buds will love the adventure all the more…
